I made up this recipe in high school and by using it week after week for bake sales, I was able to fund a good part of my missions trips to Mississippi after hurricane Katrina and Nicaragua after hurricane Felix. If we didn’t have a bake sale one week, my friends would beg me to make the S’mores bars anyways because they couldn’t go too long without the chocolatey, buttery flavor hitting their taste buds. I’m not kidding when I tell you that people were literally so addicted to them that they would ask me what kind of drugs I sprinkled in. Needless to say, due to the fact that they called for marshmallows, butter, honey graham crackers, and milk chocolate… I haven’t made them in quite some time. After stocking up on Sweet & Sara marshmallows though, I knew I had to find a way to veganize the rest of this recipe and it wasn’t nearly as hard as I thought it would be. I simply subbed semi-sweet chocolate for the milk chocolate chips, used Earth Balance butter, and did a little research in order to find which brand of graham crackers doesn’t use honey. As if that wasn’t simple enough, I forgot how these are to make… and how sinfully tasty they are!
1 sleeve of Nabisco Original Graham Crackers (I found them at food emporium and they’re completely honey-free!)
1 1/2 cups of Sweet & Sara Marshmallows (this comes to 3 packs of her minis)
a cup of semi sweet chocolate chips
1/3 cup of brown sugar
2 teaspoons of vanilla extract
1 stick of Earth Balance Butter
1. Preheat your oven to 350 degrees.
2.Crush your graham crackers… if you want to feel like a little kid, the best way to do this is by stepping on them in the sealed sleeve (just make sure it doesn’t bust open)!
3. Mix the crushed graham crackers, marshmallows, chocolate chips, and brown sugar in a 9×9 metal or glass baking pan
4. Melt the butter and then stir in the vanilla
5. Pour the vanilla mixture over the dry ingredients and make sure that it is incorporated well.
6. Bake for 15 minutes and scoop to serve warm or wait for them to cool and serve as bars. Either way, they’re fantastic!
